As part of the Technology New Zealand research project undertaken by Massey University, administered by Prof Laurence Eyres, head of Food Science, on ways to improve the quality of Olivado Avocado Oil, periodic tests were carried out on various batches between January 2001 and May 2001. The average specification of Olivado Avocado Oil taken during that period met the following target parameters:
- Acid Value (AOCS Cd 3a-63) < 0.4
- Free Fatty Acid (% of oleic) < 0.2%
- Peroxide Value (AOCS Cd 8b-90) < 1.0
- Moisture Content (AOCS Ca 2e-84) < 0.1%
- Accelerated oxidation time > 12 hrs (< 100 MEQ/Kg)
- Iodine Value (AOCS Cd lb-87) 80 to 95
- Saponification Value (AOCS Cd 3-25) 177 to 198
- Unsaponifiable Matter 1%
- Phytosterols (Beta Sitosterol) Approx. 1%
- Monounsaturated Fatty Acid Content Approx. 80%
- Sensory flavour score - Characteristic and nutty, free from painty, beany, rancid or metallic flavour notes
From these results, cold pressed Olivado Avocado Oil would qualify as a premium Extra Virgin oil under the guidelines for the classification of Extra Virgin Olive Oils, set down by the International Olive Oil Council (IOOC). These results put Olivado Avocado Oil in the top 5% worldwide of food oils for quality and taste values.
Through the Technology New Zealand Research project, Olivado NZ believes it can make even further improvements on these quality specifications.
